The only company I am aware of thast does this sort of thing, and then not sure if they only do it to Cruisers, is
Meano & Sons, in Krugersdorp. Give them a buzz and let us know what they say.
Edit:
Bailies Off Road also seem to do this, also to Cruisers... They are situated in Midrand, Gauteng.

Did you ever find someone that can do this?

It will probably be better to convert a Patrol bakkie to a double cab. Talk to Bailies. Maybe they can help.

My Safari bakkie is deur Meano's omskep in 'n double cab doer in 1986 en dit is die double cab met die meeste beenspasie van enige d/c.

Guess there are 2 choices,
take a van and cut just behind the C pillar and add a shortened "bak" (seen many Patrol ones for sale) Have seen some 100 series conversions like this. Advantage, seat belts , seats , doors etc sorted.
Usual, take bakkie and hack extra cabbie on., still need to shorten the bak, add roofline etc
First option seems easier
