Hello Jules
I did a similar trip last december, just with a few extra days built in, and would advise the following:
1) If you want to sleep over between Sani and the border, and assuming you don't want to camp, there are two fairly convenient places. The one is Oxbow lodge, which is pretty but helluve expensive, and the other is Afriski. They have a wide range of accomodation, and are virtually empty in december, so no need to book. These are both on the main tar road.
2) Katse is definately worth a visit, particularly if the dam os overflowing. Be sure to take the dam wall tour. There is a reanonably direct dirt road between Sani and Katse, but beware there are several river crossings, and if there has been a lot of rain they may not be passable. You can get from Sani to Katse in a day on either the dirt road or the tar road, but if you start off on the dirt road and then find it imapassable, there will not be enough time left to get to Katse in one day. Katse Lodge is very nice and also fairly reasonable.
There is another accomodation option possible if you are prepared to camp: about 30km into Lesotho from Sani, there is No. 10 Riverside Backpackers, where they have camping or traditional huts available. Bookings can be made through Sani Pass pub.
