Infaan, it sounds to me like there is a problem with your radiator cooling the water..... and more specifically your fan getting air through the radiator.
I quickly scanned throuh the posts but could not see if you ever replaced the visco coupling? I also had a bit of a overheating problem in traffic one day and my problem was the visco that was not working propperly.
A quick test that you can do, when the engine is starting to overheat, stop, switch the engine off and just turn the fan by hand and feel it it turns easy or if it feels stiff..... it should feel stiff when the car is hot.
